BURDESE ROSSO 0,750 - DOC MENFI

In the local dialect, Burdisi/Burdese means Bordeaux and refers to the classic blend of Cabernet Sauvignon and Cabernet Franc. It is a red wine of great density, structure, and balance, produced in limited quantities from selected vineyards. Burdese is a wine for long aging, offering a complexity of aroma and taste that has few equals in Sicily.

SOIL TYPE
In Dispensa, medium depth tending towards clayey, poor skeleton almost absent, medium calcareous. In Maroccoli, calcareous soil rich in medium-sized skeleton, slightly clayey with abundant silt fraction.

ALTITUDE
Dispensa 75 meters above sea level;
Maroccoli 430 meters above sea level.

TRAINING SYSTEM
Espalier with spurred cordon pruning system.

CULTIVATION METHOD
According to the SOStain® protocol; soils grassed with clover, vetch, yellow mustard, and spontaneous flora to increase organic matter and nitrogen content, promoting the vitality of soil microfauna; phytosanitary protection with minimal amounts of sulfur and copper; pest control using beneficial insects, mating disruption and the application of natural stimulants such as zeolite, kaolin and plant extracts.
Bordeaux made in Sicily from a selection of the best grapes from the company's vineyards. A powerful red, built on a dense and important tannic structure, balanced by a strong alcohol content. The flavor is centered on a very dense, pulpy ripe fruitiness. The flavors are those of blueberries and black cherries in alcohol, mixed with leather, while intense aromas of cherries, cocoa, iodine, and rosemary gradually emerge.
A bold, decisive, and energetic wine to be enjoyed on its own or paired with dishes of equal strength and character, such as stews or game meats. For a vegetarian alternative, try grilled radicchio with aged cheese or roasted, almost caramelized onions.
