SANTA CECILIA ROSSO BIO 0,750 - DOC NOTO

Santa Cecilia is our flagship wine, made from the most important Sicilian grape: Nero d'Avola. Our extensive search for the ideal place to make a great wine with this varietal led us to Noto, the varietal's homeland and home to the Noto DOC, at the southeastern tip of Sicily. With its white soils and ancient vineyards, it has always been the epicenter of Nero d'Avola cultivation, certified organic since the 2021 harvest. Santa Cecilia embodies elegance, power, balance, and the exaltation of the unique aromas of Sicily: today, it is a benchmark for red wines made from native Sicilian grapes. Its name derives from our family name: Planeta di Santa Cecilia.

SOIL TYPE
Soils composed of calcareous marl, abundant and small-sized gravel; fine texture with a light-colored clay fraction.

CULTIVATION METHOD
According to organic farming criteria and the SOStain® protocol; soils grassed with field beans, vetches, and wild flora to increase organic matter and nitrogen content, promoting the vitality of soil microfauna; phytosanitary protection with sulfur and copper in minimal quantities; pest control with beneficial insects, mating disruption, and the application of natural tonics such as zeolite, kaolin, and plant extracts.
It moves between balsamic, herbaceous notes, and a wide variety of fruit. The nose opens with notes of Mediterranean scrub and scents of lamellaraceae gathered on the Sicilian beaches. The red fruit is a black cherry in alcohol and an overripe wild blackberry; the citrus notes are bergamot and bitter orange. The spices are carob flour and incense. The ripe fruit on the palate melds well with the oak tannins, accompanying a very dense yet open tannin structure, perfectly balanced with the structure of this wine with a complex and unmistakable personality.
A vin de garde that doesn't shy away from classic pairings. Red meats, but well-aged and marbled; even better, more intense flavors like game, lamb, and black pork, or even hand-cut sausage.
